Ingredients:
4 Cloves 2 tsp Salt 4 Bayleaf 2 cup Rice 6 tsp Ghee 4 cup Water 2 tbsp Hot water 1 Cinnamon stick 1 tsp Cumin seed 1 cup sliced Onion 1 tsp Kesar threads 4 Black Cardamom
Method: Soak saffron in hot water. Wash and soak rice in 3 cups water. Heat ghee and fry onions, untill golden, keep aside. Add cinnamon, cloves, cumin, cardamoms and salt. After sometime, 1 minute, add the bay leaves and half of the onions. Drain the rice and reserve the water. Add the rice grains and stir for 4-5 minutes until all the water evaporates. Add the water and bring to a boil. Add saffron and its water and pressure cook. Remove from the heat and allow the pressure to drop by itself.
Tip: To separate every grain of rice and to give a flavour, add a spoonful of ghee when you put the rice to boil.
