Ingredients:
3 Carrots ¼ tsp Salt 1 tbsp Sugar 2½ cup Water 3-4 Mint leaves 1 tsp Lemon juice 1 tbsp fresh Cream ¼ tsp Chilli powder
Method: Wash carrots, scrape and cut in chunks. Add one cup water for boiling carrots, boil and simmer for 5 minutes. Mince mint leaves to a very fine paste. Put carrots in a mixer, add lemon juice, salt, sugar, chilli powder. Run till carrots are well pulped. Add water. Run mixer to mix well. When well blended, strain through sieve. Add mint, stir. Serve chilled in tall glasses and top with a small swirl of cream.
Tip: Always use very cold ice. Not all ice has the same temperature. Usually good ice looks dry outside, and if you touch it, it will stick to your finger. Bad ice is one that looks wet outside and is dripping from all sides.
