Ingredients:
flour - 1 cup rice flour - 1/3 cup butter - 1/2 cup powdered sugar - 5 tbsp salt - 1 pinch vanilla essence - 1/2 tsp clotted cream (malai) - little, if necessary
Method:
Preheat the oven to 160 C. Sift flour with rice flour and salt. Mix in the sugar. Add cold butter. Mix gently with finger tips till the fat is evenly distributed. If it is very crumbly, add a little malai. Knead gently and gather the mixture into a dough. Put the dough into a round, about ½ cm thick. Cut into rounds with a biscuit cutter. Place on a greased baking tray. Bake till golden brown (about 20 minutes). Cool and store in an air tight container
