Recipes For A Diabetic:

Soups:

1.Cauliflower And Coriander Soup:

Ingredients:

For Stock:
2 carrots, 1 onion, 2 drumstick(100g), 2 curry leaves, 1 1/2 litres water, 1/4 tsp soya sauce, salt and pepper to taste.
For Soup:
1 tsp oil, 50g barley and 50g dried peas(soaked for ab hour and cooked in a pressure cooker), 1 finely chopped onion, 1 finely chopped garlic clove, 1 tsp grated ginger, 1/2 tsp turmeric powder, 1/2 tsp cumin powder, 1 cup green chilli, 1 curry leaf, 1 diced apple(medium), 1 grated carrot, 1 medium cauliflower, 2 tbsp fresh coriander, 4-5 tbsp coconut milk, salt to taste.

Method For Stock:

Cut the vegetables into big pieces.Add 6 teacups of water and cook in a pressure cooker.Blend the mixture in a liquidizer and strain.

Method For Soup:

Heat the oil in a vessel, add the turmeric, cumin powder, onions, garlic, curry leaves, fry for a short time.Add the green chillies and fry again for 1 minute.Add the cooked barley, dried pead, dried apple and grated carrot and prepared stock.Mix well and boil for a few minutes.Add the cauliflower, coriander, soya sauce, salt and boil for 5 minutes.When ready to serve, add coconut milk and mix gently.Serve hot.
